What Types of Egg Can I Supply to Hotels

HI,

I presently supply eggs to retailers in Lagos. And I want to start supplying hotels.
Are there specifications for the egg in terms of size, colour, etc?
Do they return the crates back to me or I have to sell it together with the crates?
